Glazed Lemon Cookies by


1 1/2 sticks butter, at room temp
3/4 c granulated sugar
2 large eggs yolks
1/2 t vanilla
1/4 t salt, 2 c flour
1 c confectioners sugar
2 T lemon juice
1 t lemon zest


With mixer, beat the butter and granulated sugar until fluffy. Add the egg yolks, vanilla, and salt and beat to combine. Gradually add the flour, mixing until just incorporated.

Divide the dough in half and shape into 1 1/4" logs. Wrap in waxed paper and refrigerate until firm, about 30 min.

Heat over to 350. Slice the logs into 3/8" thick pieces and space then 1.5" apart on parchment-lined baking sheet. Bake until lightly golden, 16-20 min. Cool.

In a small bowl, whisk the confectioners sugar, lemon juice and zest until it forms a thick but pourable glaze (add more lemon juice if necessary). Dip each cookie into the glaze and let set.
