Cathy's Caprese Salad by


Grape or cherry tomatoes - halved
fresh basil - roughly chopped
fresh spinach - chopped (optional)
1" to 1/2" chunks of fresh mozzarella or brie cheese
chopped green onion stems
1" to 1/2" chunks of avocado (optional)
1/2" chunks of cucumber
Balsamic vinegar
fresh ground salt and pepper
(dried cranberries or cherries and sliced almonds optional)


Mix all salad ingredients together in a large bowl or individual salad bowl(s). Sprinkle with EVOO and balsamic vinegar; s&p to taste. YUM!
