Chicken Salad Sandwiches by

Ingredients

2 large chicken breasts, cooked then shredded
1 cup of green grapes (halved or quartered)
1/4 cup chopped walnuts
less than 1/4 cup chopped green onion, as desired
8-10 oz plain Greek yogurt
5 teaspoons honey
2 teaspoons Dijon mustard
salt and pepper to taste
Sandwich buns and/or large lettuce leaves to make lettuce wraps

Instructions

1. combine Greek yogurt, honey, Dijon mustard, salt, and pepper into large bowl and stir
2. to cook chicken, bring large pot of water to boil. Add tablespoon of seasoning to water (I usually use rosemary) and let chicken simmer for 10-15 minutes, or until cooked through. Shred chicken using two forks or chop with a knife
3. Add shredded chicken, grapes, walnuts, and green onion to bowl and mix well
4. Taste and adjust salt/pepper as needed
5. scoop onto buns or into lettuce leaves and serve
