Cà Rốt và Củ Ngâm by
- distilled white vinegar
1. Cut daikon and carrots according to preferred size and shape.
2. Sprinkle salt somewhat generously and some sugar. Let sit until softened.
3. Rinse in cold water and drain.
4. Squeeze all excess juice, as much as possible.
5. Transfer to a jar.
6. Combine with 1 part sugar, 1 part vinegar, and 2 parts warm water.
