Chili-Stuffed Bell Pepper by


1 lb. Ground chicken or 90% lean beef
1/2 t. chili powder and cumin
1/4 t. coriander, clove, cinnamon, oregano, thyme, smoked paprika, and minced garlic
2 Green bell peppers
Fresh cilantro


Mix chicken with spices and cilantro and fry with a few tablespoons of water to prevent sticking. Keep the lid on to hold water in.
Gut peppers and half vertically; stuff with 1c. chili and serve garnished with cilantro.
