Tilapia Pinwheels by


2 Tilapia fillets (halved lengthwise)
1/2 lb. fresh spinach
1 t. garlic
1/4 t. smoked paprika
1/4 t. salt
2 lemon wedges (or wheels)


Steam-sautee spinach with garlic, paprika and a squeeze of lemon. Lay 3/4 in. ribbon of sauteed spinach on halved tilapia fillet and roll. Insert toothpick to hold final shape. Bake for 10 minutes or until fish is cooked through. Serve over bed of remaining spinach with wheel of lemon on top to garnish.
