Chicken Saag by


1 lb. chicken (cubed)
1 lb. spinach (fresh)
2T garam masala spice blend
1/4 t. cayenne pepper
1/2 t. salt
1/4 c. unsweetened coconut milk or cream (optional)


Steam-sautee the cubed chicken with garam masala, salt and pepper. Remove the chicken from pot and set aside. Add spinach to pan with juices and wilt spinach. (If opted, add coconut cream). When spinach is almost wilted, put into blender and pulse until finely chopped. Pour spinach sauce over chicken cubes and stir together.
