This is one of the most popular and easiest dishes I had in Peru. It is made with very few ingredients but has a lot of flavor. Some people might think it's odd to serve this with both potatoes and rice, but it is the correct way to do it, and in my opinion, the most delicious.

Ingredients

Beef cut for a stirfry (it's up to you how much and which cut)
2 medium red onions cut into strips
5 red tomatoes sliced into strips
White vinegar (to taste, I use about 4 tbsp)
Soy sauce (to taste, I use 2 tbsp) (optional)
Red cooking wine (optional and to taste)
Canola oil for frying
Fresh Cilantro
Hot pepper (Peruvian aji is preferred but I usually use a jalapeno)
Frozen french fries

Instructions

Start off by cooking the french fries as directed.

Add a few tbsps of oil to a hot frying pan and stirfy the onion, pepper and beef together. Adding the vinegar, wine and soy sauce to taste.

Once the beef and onion are cooked, add the tomatoes and the cilantro, let cook on low heat for 5-10 minutes.

Stir in the cooked french fries and let cook for an additional 5 minutes.

Serve with white rice and fresh cilantro as a garnish.
