Linguine with Shrimp - Mom by

2 lbs fresh, ripe plum tomatoes (peeled & diced) or canned
2 tsp finely chopped garlic
2 T extra virgin olive oil
small pinch of crushed red pepper flakes
1 lb medium shrimp (31-40 per pound), cut into 1/2 " pieces
1 lb linguine
1/2 cup heavy cream


Cook pasta
Saute garlic in olive oil over med-high heat. Add tomatoes & red pepper flakes. Cook until most of water from tomatoes evaporates. Add cream & cook until reduced to half. Add shrimp, season with salt and cook until pink (2-3 mins). Serve over cooked linguine.
