Carrot Cake - Grandma Bartosic by

Grandma Bartosic or Auntie Mame made this for us when we visited in Oshkosh, WI.


2 cups flour
4 eggs
2 tsp vanilla
1 small can crushed pineapple, drained
1 cup chopped nuts
2 cups sugar
1 cup oil
2 tsp baking soda
1 tsp salt
2 cups grated carrots
1/2 box coconut

4 oz cream cheese
2 cups powdered sugar
1 T butter
1 tsp vanilla
1/2 cup English walnuts, chopped


Meat eggs, add sugar and oil. Sift dry ingredients and add. Add vanilla, pineapple coconut, carrots and nuts.

Bake in 350 degree oven for 45 mins.

Mix frosting ingredients together and frost cooled cake.
