Apple Mystery by

Make 10-12 servings. Garnish with mint leaves if available.

Ingredients

2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup sugar
3 egg yolks, well beaten
1 (15oz) can sweetened condensed milk
1 cup thick apple sauce
1/3 cup lemon juice
1 tablespoon grated lemon rind
3 egg whites, beaten stiff

Instructions

1. Mix together crumbs, butter, and sugar; reserve 1/2 cup mixture.
2. Press remaining crumbs in bottom and on sides of 8x12" pan.
3. Combine yolks, milk, applesauce, lemon juice and rind. 2. Fold in egg whites.
3. Pour into crumb crust.
4. Top with remaining crumbs.
5. Chill several hours or overnight (may freeze for later use)
6. Serve with whipped cream.
