Eggs over veggie-lime Saute by

Ingredients
1 whole wheat tortilla
1/2 tomato, diced
1 Tbsp. Onion, diced
1 clove Garlic, minced
1 Tbsp. jalapeno, chopped
1 handful of arugula or spinach
1 Tbsp lime juice
1 Tbsp olive oil
2 eggs
Salt, pepper, and shredded cheese to taste

Instructions
1. Heat olive oil in pan
2. Add onions and garlic. Cook for 1 minute
3. Add tomatoes and jalapeno, and a dash of salt and pepper. cook for 1 minute
4. Add arugula, cook until tomatoes are almost done
5. Add a dash of lime juice, simmer for a minute and remove from pan.
6. Wipe excess juice from pan and spray with a little cooking spray
7. Heat tortilla over another burner
8. Fry 2 eggs in pan, make sure yolks stay runny.
9. Scoop the vegetable saute over the warm tortilla and put the two fried eggs on top. Break the yolks, sprinkle with mexican blend cheese, and top with hot sauce or salsa.
