Lemon Cream Cheese Cupcakes by

Ingredients

1 pkg white cake mix
1 pk (3.4 oz) lemon instant pudding
1 c water
4 egg whites
2 T oil

Frosting:
1 8oz package cream cheese, softened
1/4 c butter softened
2 T lemon juice (fresh is best)
1 16oz bag powdered sugar

Instructions

Heat oven to 350
Beat cake mix, pudding, water, egg whites, and oil together. Spoon into muffin tins and bake 20-14 min.

Beat together cream cheese and butter til creamy.
Add lemon juice.
Add powdered sugar one cup at a time.

I like to add some lemon zest to the cake mix and also top the cupcakes with a lemon drop candy.
