Caramel Flan (Kesiyo) by


1 cup granulated sugar
4 tbsps. Water
5 eggs
2 cans evaporated milk
1 can condensed milk
1 tbsp. vanilla essence


Heat sugar with water in a heavy pan and stir until sugar dissolves
Boil without stirring until it turns golden brown
Pour caramel into baking dish
In a large bowl whisk remaining ingredients
Pour mixture over the caramel in the baking dish and place baking dish in a water bath (bain-marie)
Bake in preheated oven at 350F (180C) for 1 hour
Remove, let cool thoroughly and then unmold. Serve chilled.
