Stuffed Green Peppers by

Ingredients

4 Green Peppers
2 Cups cooked rice
1 Yellow Onion Diced
1 Jalapeno Pepper Diced
2 Tbs Southwest Spice Blend
1.5 Pounds Ground Turkey
1 Tsp Chipotle Powder
1 can of diced tomatoes.
2 Cups Monterey Jack Grated Cheese

Instructions

1) Cook rice and preheat oven to 425 degrees.
2) Add Onion and Jalapeņo peppers to a skillet with a drizzle of olive oil. Cook until tender.
3) Add 2 Tsp Southwest Spice Mix and Turkey. Cook until done.
4) Add Rice & tomatoes to skillet and blend well adding a touch of Chipotle powder salt and pepper.
5) Stuff Peppers and place in the oven at 425 for 15 minutes.
6) Sprinkle with cheese and bake for 2 or 3 more minutes.
