Cherry Tomato Salsa by

If you don't have a garden, here is a Tomatillo Salsa verde recipe: 8 tomatillos, husked, rinsed, chopped 3 Tbs cilantro; 4 oz can of peeled green chiles 1 tsp minced garlic 2 Tbs chopped onion Blend in blender (all ingredients) and refrigerate 1 hour Here is a quick, great recipe to try your salsa on: Simmer a can of traditional refried beans and spoon into 10 warm tortillas with shredded white meat cooked chicken, and top with guacamole, cabbage slaw, and fresh lime juice.

Ingredients

2 cups fresh garden cherry tomatoes
1 large shallot minced
1 clove of garlic minced
2 Tbs. chopped cilantro
1 Tbs white wine vinegar
salt and pepper
2 tsp lime juice
2 fresh garden jalapenos, seeded and chopped

Instructions

You may halve each tomato and in the blender process till rough consistency. Get rid of excess juice, and add remaining ingredients.

Refrigerate for 2 hours.
