Banana Nut Bread by

I find that the baking time always takes a little longer. To test plunge a tooth pick into center and when it comes out clean -- it's done. Work a knife around edges to loosen while it is still warm, and turn out onto a large plate to cool further.
TIP: To get an even moister loaf try three bananas; then it will take a full hour to cook. This bread is delicious as a side for an elegant Breakfast Brunch. As a dessert, good with a scoop of vanilla ice cream or whipped cream cheese is good spread on top, or just real butter!
Ingredients
1/3 Cup shortening
1/2 C sugar
2 eggs
1 3/4 C flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp salt
1 C of mashed bananas (two very ripe, slightly black bananas)
1/2 c chopped walnuts
1/2 tsp vanilla extract (optional)
1/3 Cup
shortening
1/2

Instructions
Cream together shortening and sugar in standard hand held mixer.
Beat in eggs
Sift dry ingredients
Add dry ingredients a little at a time, alternately with mashed bananas. Blend well, and stir in nuts.
Pour mixture into a greased glass or metal loaf pan and bake at 350 degrees F. for 45 - 50 minutes.
