Linda’s Fresh Fruit Cobbler by

This recipe can be made with almost any fresh fruit. It was originally made for apples, but you can also combine peaches and blueberries (my favorite!), or strawberries, raspberries and blueberries. It's very quick and easy!

Ingredients

8 apples, peeled and sliced
1 cup flour
1 cup sugar
1/2 tsp salt
1 tsp baking powder
1 egg
1/3 cup melted butter
2 Tbs water
Add'l 1/2 cup sugar
1 tsp cinnamon

Instructions

Preheat the oven to 350. Generously butter a 13" by 9" deep dish baking pan. Blend the fruit with the 1/2 cup sugar and cinnamon (if I'm using peaches, I use some brown sugar, too. If I'm using just berries, I add a little flour to this to keep it from getting too juicy) and spread it evenly in the pan. In another bowl, blend all the dry ingredients. Beat the egg, and add it to the dry ingredients with a fork until it is crumbly (it will look very dry). Spread this evenly over the fruit, drizzle the melted butter over it, and then sprinkle with the water. Bake it for about 40 minutes until the fruit is very bubbly. Serve it with fresh whipped cream or vanilla ice cream, if desired. Yum!
