Whole fish like branzino, ask for it to be definned, descaled, head off

Sauce: melted butter, stock, soy, 1/2 lemon, parsley, garlic (2:1 ratio of butter/stock to soy)

Stuffing: lemon slices, thyme, garlic, s/p

Instructions

Fillet fish
stuff fish
sear both sides (~2 min/side)
Pour sauce on top
425* oven 9 min w/ broiler 1-2 min

--make w/ small steak for surf/turf
