Ingredients

2 baked russet potatoes or 2 c mashed potatoes
1 c flour
1 egg
Salt
Pepper
Herbs optional
Ricotta optional

Instructions

Mash and warm potatoes. Add optional ricotta
Sift flour, salt, pepper over it. MIX
Add lightly beaten egg. MIX
add optional thyme, other herbs
Knead, cut in half or quarters
Roll out cigar width
Cut 1 inch
Roll off fork
Boil til it floats
Pan sear
