Sheet pan Carne Asada by


1/4 cup vegetable oil
1 & 1/2 teaspoons cumin
1 & 1/2 teaspoons ground coriander
3/4 teaspoon salt
2 ears fresh corn on the cob, cut into thirds, or 6 pieces frozen corn, thawed
1 medium red bell pepper, cut into strips
1 medium yellow bell pepper, cut into strips
1 medium onion, thinly sliced
1 (1 oz.) package taco seasoning mix
1/4 teaspoon cayenne pepper
1 & 1/3 pound flank beef steak
Flour or corn Tortillas and toppings, as desired
shredded cheese, Avocado, cilantro and sour cream make great toppings


Position oven rack to 4 inches from broiler element. Spray 18x13 inch rimmed sheet pan with cooking spray. In large bowl, mix 2 Tablespoons vegetable oil, cumin, coriander and salt. Add corn, bell peppers and onion to bowl and toss to coat, transfer to pan. In same large bowl, mix remaining 2 Tablespoons oil, taco seasoning and cayenne pepper. Add steak, rub mixture into steak. Transfer to pan with vegetables. Broil 8-10 minutes, turning steak and stirring vegetables once. For medium, steak should read 135*F. Transfer steak to cutting board, cover with foil, and let rest 5 minutes. Stir vegetables in pan, return to oven, and broil 4-6 minutes longer until vegetables are blackened in some spots. Thinly slice steak on the bias, against the grain. Serve with vegetables in tortillas with toppings.
