One Pot Lasagna Soup by


1 pound ground Italian sausage
1/2 cup onion, diced
4 cups chicken broth
2 (14.5 oz.) cans diced tomatoes with Italian herbs, drained
1/4 teaspoon pepper
6 oz. lasagna noodles, broken in pieces
1/2 cup parmesan cheese
1 & 1/2 cups Ricotta cheese


In large pot cook sausage and onions over medium heat, stirring occasionally, until meat is cooked and onion is tender. Drain fat. Stir in chicken broth, tomatoes, pepper and noodles. Heat to boil, reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until pasta is done. Serve soup with Parmesan cheese and ricotta cheese.
