Slow Cooker Beef on Rice by


2 pounds beef chunks (stew meat)
4 cups beef broth
1 onion, chopped
1 teaspoon Italian seasoning
2 teaspoon salt
1 teaspoon pepper
1/4 cup cold water
3 Tablespoons cornstarch
4-6 cups cooked white rice


Add beef, broth and onion to slow cooker (crockpot). Sprinkle with salt and pepper, and Italian seasoning. Cook on low for 8 hours or 4 hours on high.
About 10-15 minutes before serving, transfer to large pot and bring to boil. Whisk together cold water and cornstarch, add to pot, stirring until thickened. Serve over rice and sprinkle with chopped parsley if desired.
