Cinnamon Candied Almonds, Pecans, or Walnuts by


1 cup sugar
1/2 cup water
1 Tablespoon cinnamon
2 cups Almonds, pecans, or walnuts


In a medium saucepan, mix cinnamon and sugar ( so cinnamon won't blob later). Add water and stir well. Bring to boil over medium heat, add nuts. Continue boiling, stirring constantly, until nearly all the water evaporates. Pour onto cookie sheet covered with wax paper. Working quickly, separate nuts with forks, so they aren't blobs.

If you do not cook until liquid evaporates, you will get pools of sugar.

Not cooking long enough the nuts will look glossy instead of sugared.
