Meringue Cookies by


3 egg whites
1/4 teaspoon cream of tartar
3/4 cup powdered sugar
1/4 teaspoon vanilla

optional: 1/8 of peppermint extract and red food coloring


Beat egg whites to make meringue. Slowly add in remaining ingredients. Place by teaspoon on cookie sheet lined with wax paper. Bake 1 & 1/2 to 1 & 3/4 hours at 200*F. Let cool in oven for several hours with oven turned off after baking.

Cookies can also be piped from piping bag to wax paper lined cookie sheets. White meringues with swirls of red and peppermint are great for Christmas!
