Peanut Brittle by


2 cups raw peanuts
1 cup corn syrup
2 cups sugar
1 teaspoon vanilla
2 teaspoons baking soda
2 Tablespoons butter
1 teaspoon salt


Put corn syrup and sugar in nonstick pot on stove. Bring to boil of 260*F. Add peanuts and salt, cook to crack stage or 305*F. Turn off stove. Add butter and vanilla, stir. Then add baking soda, stiff until fluffy. Pour onto lightly greased baking sheet, cool and crack. Store in airtight container.
