Coconut Pie by


3 Tablespoons cornstarch
1 cup and 4 Tablespoons sugar
1/8 teaspoon salt
3 Tablespoons butter
1 cup evaporated milk
1 cup milk
2 eggs, separated, set whites aside
1 teaspoon vanilla
1 baked pie shell
1 & 1/2 cup coconut


Mix together 1 cup sugar, cornstarch and salt. In a saucepan, pour in canned milk, milk, butter, egg yolks, and coconut. Begin to warm over medium heat then add dry ingredients. Cook until thickens and remove from heat. Add vanilla. Pour into baked pie shell. Beat egg whites, add sugar 1 Tablespoon at a time until stiff. Top pie with meringue and bake for 3-5 minutes or until golden brown.
