Chocolate Peanut Butter Stacks by

1 box Ritz crackers
1/2 cup creamy peanut butter
1/2 cup marshmallow creme
1 pound chocolate, melted for dipping
Holiday sprinkles, optional

Line a baking sheet with wax paper. Lay half the crackers on baking sheet, set aside. In a medium bowl, add peanut butter and marshmallow creme, stir to combine. Evenly spread a thin layer of peanut butter mixture onto crackers on the baking sheet. Top with remaining crackers to create sandwiches. Place in refrigerator while melting chocolate. To melt chocolate, place chocolate in microwave safe bowl, microwave on high power in 1 minute intervals stirring after each minute until completely melted. Dip each stack into melted chocolate coating both sides. Place back onto wax paper and sprinkle with sprinkles. Place in refrigerator until chocolate has harden before serving. Stacks will keep airtight at room temperature for up to 2 weeks, in the fridge for 1 month, or in freezer for at least 4 months.
