Hawaiian Wedding Cake with Whipped Cream Cheese Frosting by


1 cup sugar
1/2 cup brown sugar
1 teaspoon baking soda
2 cups flour
2 eggs
1 (20 oz.) can crushed pineapple in juice
1 cup finely chopped walnuts
3/4 cup flaked coconut
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon salt
1 teaspoon vanilla

1 (8 oz.) package cream cheese, room temperature
1 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 & 1/2 cups heavy whipping cream


Preheat oven to 350*F and grease a 9x13 rectangular pan. In a bowl, mix all dry ingredients together and mix the eggs, vanilla and crushed pineapple with juice until well combined. Pour batter into pan and bake for 35-40 minutes.
To make Frosting: Beat the whipping cream in a small bowl until fluffy and set aside. Mix the cream cheese, sugar, salt and vanilla in a large bowl until smooth and creamy. Stir in the whipped cream and mix to combine.
Once cake is completely cooled, frost it and top with anything of your desire, such as toasted coconut. Adding orange extract to the frosting is good too.
