Hummingbird Mini Loaves by


1 (20 oz.) can crushed pineapple in juice, undrained
1 yellow cake mix
1 (3.4 oz.) box Jell-O vanilla instant pudding
1 teaspoon cinnamon
4 eggs
1/4 cup oil
1 cup mashed bananas, about 3 bananas
1/2 cup chopped pecans
2 oz. cream cheese, softened
1 Tablespoon milk
1/2 cup powdered sugar


Heat oven to 350*F. Drain the pineapple, reserving 1 cup of juice. Add reserved juice to dry cake mix, dry pudding mix, cinnamon, eggs and oil in a large bowl until blended. Add crushed pineapple, bananas and nuts, beat until blended. Pour into 5 mini loaf pans sprayed with cooking spray. Bake 40 minutes or until toothpick inserted near center comes out clean. Cool completely. Beat cream cheese, milk and sugar in a small bowl with mixer until blended, drizzle over loaves.
