Re's Cornbread by

This is Grandpa Mark's grandmother's recipe! :) We called her "Re". Her name was Marie Ellis. I loved her to pieces, too. :)

Ingredients

Measurements for full recipe & half recipe:
2 well-beaten eggs (1 well-beaten egg)
1C buttermilk (1/2C buttermilk)
1/3C oil (5.3T oil)
1 1/3 C cornmeal (2/3 C cornmeal)
1/2t baking soda (1/4t baking soda)
2t baking powder (1t baking powder)
2t salt (1t salt)

Instructions

Preheat oven 400 degrees.

Lightly spray dish with oil then dust with cornmeal. Put in oven for about 10 minutes or until lightly brown. Doing this step will prevent your finished cornbread from sticking to the dish.

Mix dry ingredients together.
Mix wet ingredients together.
Mix together.

Bake for 20 minutes.
Enjoy!
