Herbed Tomato Sauce by

2 teaspoons olive oil
1 yellow onion, finely chopped (1 cup)
3 pounds ripe fresh tomatoes, peeled, seeded, and coarsely chopped
1/2 teaspoon each dried basil and oregano, crumbled
1/4 teaspoon each salt and black pepper, or to taste
3 tablespoons minced fresh basil, parsley, or snipped chives or a combination


In a heavy medium saucepan, heat oil over moderate heat. Add onion and saute, stirring occasionally, until soft, about 5 minutes. Lower heat and add tomatoes, dried basil and oregano, salt, and pepper and bring to a simmer. Cook, covered, stirring occasionally, for 15 minutes or until sauce thickens. Stir in the fresh basil. Serve over cooked pasta with a sprinkling of grated Parmesan cheese.
