LACTATION COOKIES by

My daughter got this recipe from her lactation specialist when she had a premie and was having difficuty with lactation. They help increase milk production for nursing mothers. They taste very good and are healthy for anyone.

Ingredients

1 cup butter
1 cup sugar
1 cup firmly packed brown sugar
4 tablespoons water
2 tablespoons flax seed meal (don't skip this step, and no substitutions)
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups steel cut oats
1 cup chocolate chips
4 tablespoons brwer's yeast

Instructions

1. Preheat oven to 350 degrees.

2. Mix the flaxseed meal and water and let sit for 3-5 minutes.

3. Cream the butter, sugar and brown sugar.

4. Add eggs and mix well.

5. Add flaxseed meal and vanilla, mix well.

6. Sift together flour, brewer's yeast, baking soda and salt.

7. Add dry ingredients to butter mix.

8. Thoroughly stir in oats and chocolate chips.

9. Scoop onto baking sheet, approximately 1" balls.

10. Bake for 12 minutes.

11. Allow cookies to set for a few minutes before removing from tray.
