Buffalo Chicken Bites by

2 c. flour
1 tbsp. seasoned salt
1/4 c. cornstarch
1/4 tsp. black pepper
1 tbsp. paprika
1 1/2 tsp. chili powder
1 1/2 tsp. salt
2 1/2 lbs. boneless skinless chicken breasts cut into bite size pieces
1/2 c. milk
1 egg
1/2 c. water
oil for frying
1 c. hot sauce
1/2 c. butter
1/2 tsp. chili powder
1/2 tsp. cayenne pepper
1/4 tsp. salt


In a medium bowl, combine flour, seasoned salt, cornstarch, black pepper, paprika, chili powder, and salt. In another bowl, combine milk, egg, and water. Dredge chicken strips into flour mixture dip into milk and egg mixture, and then dredge the chicken again in the seasoned flour. Shake off excess flour and deep fry in hot canola oil until golden brown.

Once all chicken is prepared, in a pot combine hot sauce, butter, chili powder, cayenne pepper, and salt. Put chicken into pot, and stir at low heat until all is covered in hot sauce mixture.

Serve hot, with Bleu cheese, or ranch dipping sauce.
