Chickpea Chocolate Chip Cookies by

1 cup brown sugar, packed
3/4 cup butter, softened
2 egg whites
2 teaspoons vanilla extract
15-ounce can chickpeas, drained and rinsed
2 cups chocolate chips
2 cups all-purpose flour
1/2 cup old fashioned oats
1 teaspoon baking soda
1/4 teaspoon salt
1-2 tablespoons flaxseed


Preheat the oven to 350 degrees. Coat a baking sheet with cooking spray.

In a large mixing bowl, beat the sugar and butter until smooth. Beat in the egg whites and vanilla, then the chickpeas and chocolate chips. Add the flour, oats, baking soda, salt, and flaxseed. Mix all ingredients.

Drop the dough by the tablespoonful onto the baking sheet. Bake 11 to 13 minutes. Do not overbake. Transfer to a rack to cool.
