Ingredients

250g plain sweet biscuits (Marie biscuits, Yo-Yo, etc.)
175g butter, melted
Pinch of ground cinnamon
395g can NESTLÉ Sweetened Condensed Milk (or homemade)
1/2 cup (125ml) strained lemon juice
3/4 cup (180ml) boiling water
2 teaspoons gelatine powder
85g red jelly crystals



HOMEMADE CONDENSED MILK:
3/4 Cup Boiling Water
80g Chopped Butter
2 1/3 cups milk powder
1 1/2 cups caster sugar


Instructions

1. Grease and line the base and sides of a 20cm x 30cm slice pan, extending paper 2cm above the sides of the pan.

2.Process biscuits in a food processor to fine crumbs. Add butter and cinnamon and process again. Press biscuit mixture into the base of prepared pan. Chill for 30 minutes or until firm.

3. Put condensed milk (see instructions below to make your own 'homemade') In a large bowl. Combine boiling water and gelatine in a separate small jug. Stir until completely dissolved, then stir into condensed milk mixture. Stir in lemon juice. Pour over biscuit base and return to the refrigerator for 1 hour or until set. Meanwhile, prepare jelly according to packet instructions, using 100ml less cold water than directed. Allow to come to room temperature.

4. When milk filling is set, pour jelly mixture on top. Chill for a further 1 hour or until jelly is set.

6. Carefully remove slice from pan, then slice to serve.




HOW TO MAKE SWEETENED CONDENSED MILK
1. Put boiling water in a heatproof jug (1L Pyrex is ideal) add butter to boiling water, stir until melted.
2. Add contents to a whizz.
3. Add 2 1/3 cups milk powder
4. Add 1 1/2 cups caster sugar
5. Blend until smooth, then set aside to cool.
TIP 1: Store in the fridge for up to 3 days.
TIP 2: Chilling the mixture thickens it.
