Spicy Mango Salad by

This is a-MAZ-ing!

Ingredients

3 large mangos, peeled and cubed
3 tablespoons fresh lime juice
1 ½ tablespoons extra-virgin olive oil
2 teaspoons red pepper flakes
1 ½ tablespoons fresh cilantro chopped
¼ teaspoon ground cumin
1 ½ tablespoons purple onion, minced
salt and freshly ground black pepper to taste

Instructions

Place the mango cubes into a medium bowl.

In a smaller bowl, place remaining ingredients except salt and pepper. Whisk in lime juice and olive oil. Pour over mangos and stir to coat.

Cover and refrigerate for about 30 minutes. Add salt and pepper to taste before serving.
