Gluten free dinner rolls by janine

Ingredients

2 3/4 cups pillsbury gluten free flour or gluten free flour of your choice so long as coconut isn’t an ingredient it won’t taste right. Some flour already has xanathan gum in it but if it doesn’t , add 1 1/2 tsp xanathan gum to the recipe. 2 tsp of instant yeast if you are using a bread maker for the dough use bread maker instant yeast. The yeasts are gluten free. 1/4 cup of sugar 1 tsp of salt 1 cup of warm milk 2 tbsp butter 1 large egg room temperature 1 tsp apple cider vinegar Stand mixer with bowl and hook attachments Or bread machine to make the dough Disposable 8 or 9 inch round cake or pie pan or a regular one Non stick cooking spray Small sauce pan to melt the butter

Instructions

If you are going to use a bread machine for the dough , add wet then dry ingredients then add yeast last and put on dough setting. If you are using a stand mixer follow the instructions below.
In mixing bowl of your mixer add flour , sugar, instant yeast and salt and xanathan gum if flour doesn’t have it whisk until incorporated.
Melt butter in small sauce pan on medium heat until completely melted
With mixer on low speed add in water, melted butter, egg and apple cider vinegar.
Mix on medium speed three minutes.
Spray 8 or 9 inch pan of your choice with non stick cooking spray, using a 2 inch scoop or 1/3 cup measuring cup , scoop dough into 9 mounds in the pan. Place one mound in the middle and the other 8 around it .
Dip your finger tips into warm water to smooth out tops of the rolls continue doing so as needed.
Cover with a clean towel let rise 45 minutes to 1 hour.
During the last few minutes of the rising process pre heat oven to 400 f or 200 c
Bake at 400 f or 200 c for 26-28 minutes tops should be golden brown.
Brush with melted butter serve warm
