Andouille Sausage and Red Potatoes ** by M_Sheahan


1 to 2 Tbs Cooking Oil 1 Large Onion chopped 1 Large bell pepper chopped 2 cloves of garlic 1 lb Andouille sausage 2 lbs Red Potatoes cubed (about 5 large) 2 Tsp cajun seasoning A pinch of red pepper flakes Salt and pepper to taste


In a large skillet over medium heat add the sausage and cook. Then heat the oil, onion, pepper and garlic. Sauce for about 5 minutes then add sausage back into the skillet.

Add potatoes and seasoning and continue to cook for about 30 minutes or until potatoes are very tender. Stir occasionally, adjust spices based on taste.
