Homestyle Red Potato Salad by

Ingredients

3 lb red potatoes, cubed
Salt
Black pepper
1½ cup mayonnaise
⅓ cup buttermilk
½ tsp onion powder
½ tsp garlic powder
2 Tbsp apple cider vinegar
2 Tbsp yellow mustard
1 Tbsp sugar
⅓ cup sweet pickle relish
3 hard boiled eggs, peeled & chopped
1 small sweet onion, small dice
¼ cup red bell pepper, small dice
1 celery stalk, small dice
Paprika

Instructions

1. Place the cubed red potatoes into a medium sauce pan and cover with cold water. Season the water with 1 tsp of salt. Bring to a boil and cook for 12-15 minutes until fork tender. Drain well.

2. In a medium size mixing bowl, whisk together the mayonnaise, buttermilk, onion powder, garlic powder, apple cider vinegar, yellow mustard and sugar. Season with salt and black pepper to taste.

3. Add the sweet pickle relish, chopped hard boiled eggs, chopped onion, red bell pepper and celery. Stir well.

4. Add the cooked potatoes. Gently stir until the dressing has coated the potatoes. Chill well.

5. Stir well, before transferring to a serving bowl. Adjust the salt and black pepper, if needed. Dust the top with paprika.
