Mama's Parmesan Chicken Tenders by Katy Hall

I developed this recipe after trying the 'traditional' recipe on a jar of Hellman's mayonnaise. We wanted a more diverse flavor profile and more pleasing texture in the coating. Adding the Panko and dry Italian dressing mix really satisfies!

Ingredients

breading: 1/2 C Panko bread crumbs 1/2 C grated Parmesan cheese 1 envelope Good Seasons Dry Italian dressing mix 12 chicken tenders 1/2 C mayonnaise

Instructions

Mix all three breading ingredients together, put into a shaker container with large holes (like a cheese shaker from an Italian restaurant)lay chicken pieces out on a wire rack set into a baking sheet. Using a silicone brush, cover exposed side of chicken tenders with mayonnaise. Coat with breading shaken out of container onto chicken tenders. Gently turn chicken tenders over and do same to second side. Cook on rack in 350 degree oven for 25-30 minutes until desired golden brown. 2-3 tenders per serving.
