Sweet Potatoes and Marshmellows by Patty Mueller

Ingredients

2 tablespoons of butter 2 cups brown sugar 1 1/2 cups of water 2 1/2 pounds sweet potatoes or yams (about 6 potatoes) 1 lemon, sliced thinly 1/2 cup chopped pecans (optional) 3 cups Marshmellows

Instructions

Heat oven to 350 degrees

In large pot melt butter , stir in brown sugar & water. Bring to boil then simmer until thickened , about 10 min.
Peel potatoes & cut in 1 in chunks & boil for about for about 5 min.
Drain potatoes & arrange in 13x9 in. Baking dish. Pour syrup over the potatoes , place lemon slices on top & bake for 35 min., spooning syrup over potatoes twice during baking time.
Remove from oven & stir in pecans. Arrange Marshmellows evenly on top. Turn oven up to 400 deg & bake 10 min. More or until Marshmellows brown.
