Light Chicken Salad by Patty Mueller

Ingredients

1 roasted chicken , shredded 1/4 cup golden raisins 1 large celery rib, minced 1 medium green onion, minced 2 tsp sesame seeds 1/2 cup nonfat yogurt 3 tablespoons light mayo 1 1/2 tablespoons lemon juice, fresh 2 tsp grated ginger 1 tsp chili oil 1 tablespoon chutney or 1 tsp brown sugar 1/4 tsp salt

Instructions

Combine yogurt, mayo, lemon juice, ginger, sesame oil, chili oil, brown sugar & salt.
Combine chicken, raisins, celery, green onion & sesame seeds. ( I also add red grapes).
Mix chicken mix with yogurt dressing & refrigerate.
I serve in on a bed of butter lettuce but its good for sandwiches too.
