Ingredients

Makes 6-8 Sandwiches 8-10 Hard Boiled Eggs 2 Tbsp Red Onion - Minced 1/2 Red Pepper - Minced 2 Celery Stalks - Finely Chopped 2 Avacados 1/2 Cup Grated Cheddar Cheese Bread Fresh Spinach Leaves Salt And Pepper - To Taste

Instructions

Place 8-10 eggs in a large sauce pan. Cover them with 1 inch of cold water. Heat saucepan on medium-high until water starts to boil. Once boiling, cover and remove from heat. Let stand for 12 minutes to cook. Place eggs in a strainer and run under cold water.

Once cooled, peel and rinse eggs. Place eggs in a large bowl and mash with 2 Avacados.

Stir in onion, red pepper and celery.

Stir in cheddar cheese.

Butter or margarine your bread and add fresh spinach leaves.

Spread your egg salad, salt and pepper it to taste and serve!

It is the most delicious egg salad sandwich I have ever had! I personally do not eat mayonnaise but my partner usually does and preferred these sandwiches without. It's a very light but satisfying healthy egg salad dinner.
