Quick Pickled Red Onions by suhu

Mild onions stay crispy and delicious for several weeks.

Ingredients

Ingredients ½ red onion, sliced thin (or whole onion) 2 cups boiling water ¾ cup rice vinegar 1 tsp salt 1 tsp sugar

Combine rice vinegar, salt and sugar in a jar and stir to dissolve.
Pour hot water over sliced onions through a sieve in the sink.
Add onions to jar with liquid and cover.
Refrigerate.
Enjoy on sandwiches or Buddha bowls, etc.
