Ingredients

Ingredients 2 cups old-fashioned rolled oats 1.5 cups chopped raw nuts any mixture 1 tbsp lemon zest (optional) 1 tbsp orange zest (optional) 2 tbsp fresh orange juice (optional) 3/4 tsp salt (reduce or omit) 2 tsp cinnamon 2 tsp vanilla extract 1/2 cup maple syrup (reduce or combine with honey or agave) 1 cup raw pumpkin seeds 1/4 cup plain unsweetened applesauce 1 large apple coarsely chopped ADD AFTER BAKING: 1 cup raisins 1 cup dried cranberries

Preheat oven to 325*
Thoroughly combine all ingredients (except raisins and cranberries as noted) together in large bowl.
Spread onto a rimmed baking sheet (or two if doubling).

Bake for 20 minutes, stir. Bake for another 25-35 minutes or until golden brown. It'll harden once cooled, watch as to not burn it.
Store in sealed container at room temperature.
