Kale Almond Salad by rkstata

Add or remove any vegetables you would like.


1 bunch of kale, torn or 4 cups pre-shredded kale 1/2 teaspoon extra-virgin olive oil 1 carrot, shredded 2 stalks celery, sliced 1/2 cucumber, sliced 1/4 cup parsley leaves 1 green apple, diced 2 tablespoons ginger, minced 1/2 cup raw slivered almonds 2 tablespoons balsamic vinegar 1 tablespoon fresh lemon juice


1. Tear kale into small pieces (if not already shredded) and place in large bowl.
2. Pour in 1/2 teaspoon of extra-virgin olive oil into the kale, and massage for 2 or 3 minutes until it begins to break down.
3. Add the carrots, cucumber, celery, parsley, apple slices, almonds, minced ginger, balsamic vinegar, and fresh lemon juice to the bowl of kale.
4. Toss to combine until everything is well mixed.
