Green Pepper and Cheddar Corn Bread by rainfur5

Ingredients

1 cup finely chopped green pepper 1/2 cup chopped onion 3 tablespoons butter 1 cup yellow cornmeal 1/2 teaspoon salt 1 cup plain yogurt 4 teaspoons double acting baking powder 1/2 cup butter, melted 2 eggs, well beaten 1/4 pound sharp cheddar cheese, very finely diced

Instructions

Preheat oven to 350 degrees. Cook green pepper and onion in 3 tablespoons butter on medium heat until tender, about 10 minutes, stirring occasionally. Transfer to mixing bowl and add remaining ingredients. Mix just until moistened. Pour into well-buttered 8-inch square baking dish. Bake for 20 to 30 minutes or until toothpick inserted in center comes out clean. Serve very hot.
