Smoked Fish Pie by moopoo

Ingredients

50g Butter 1 diced onion 1 tsp curry powder 1 Tbsp lemon pepper 750ml milk 2 diced tomatoes 1 C frozen mixed vegetables 1/2C Flour salt and pepper (to taste) Tin of smoked fish (approx 400g) 3 boiled eggs (sliced) 2-3C mashed potatoes 1C grated cheese Parsley

Instructions

Melt butter in a large pan, saute tomatoes, onion and frozen vegetables. Add curry powder, salt, pepper and lemon pepper. After 5 mins add flour and gradually add milk, stirring until it boils. stir through fish.

Put in a large oven proof dish, lay sliced eggs on top. Spoon over mashed potatoes then sprinkle with cheese and parsley.

Bake 180C for 30-45 mins or until warmed through and cheese is golden.
