Ingredients

CAKE: 1 1/2 C packed MixQuick(203 g) 1/2 c sugar 1/2 c non-dairy liquid creamer 2 tbs low trans fat shortening 1 tsp vanilla Broiled Topping: 1/2 c shredded coconut (62 g) 1/3 c packed brown sugar 3 tbs butter softened 2 tbs non-dairy liquid creamer

Instructions

CAKE:
Heat over to 350 and grease an 8 inch square or round pan.

Mix all ingredients except topping in a large bowl and pour into pan.

Bake 25 to 30 minutes until toothpick inserted in center comes out clean; cool slightly.

Broiled Topping:
Mix all the ingredients together and spread topping over cake.

Set over control to broil.

Broil about 3-inches from heat about 3 minutes or until golden brown.
